As you all know, I love being in the kitchen and enjoy baking a lot. However, all those cookies and cakes with sugar and butter are not the healthiest things you could eat. So therefore, I will hereby give you my recipe of a lime-honey cake without sugar and wihout butter! Instead of sugar I've used honey and instead of butter I've used olive oil. The reason it's lime cake and not lemon cake is because I always prefer lime over lemon.
Okay, here it goes!
Ingredients:
- 250 gr self raising gluten free flour (brown rice flour or buckwheat flour will do too)
- 150 ml honey
- 150 ml olive oil
- pinch of salt
- 2 tea spoons cinnamon
- vanilla (either 1 vanilla bean or 5 drops of essence)
- 2 large eggs
- 1 lime
- 2 large bowls
- 2 small bowls
Set the oven on 160°C.
In the first large bowl you put the flour together with a pinch of salt and the cinnamon. In case you are not using self raising flour, make sure you add baking powder too.
In the second large bowl you add the olive oil, honey and vanilla. You then add the zest and juice of 1 lime. You seperate the egg whites from the yolks in two small bowls and add the yolks to the mixture.
Put the mixtures of the two large bowls together and make sure it will get a smooth texture. Then you whisk the eggs whites until it looks fluffy (this will take a while, but I always do it by hand) and add this to the mixture.
Grease a cake tin with some olive oil and pour the mixture in the tin. Now all you have to do is put it in the oven for about 45-55 minutes. I'd advise you to put the heat a bit lower (towards 150°C) for the last 15 minutes.
